But what is Biryani, really?
It is a dish layered with memory, mastery, and meaning. A symphony of taste, time, and technique. A dish that has adorned the dinner tables of humble homes and royal courts alike.

Handed down through generations, biryani is food that is sealed and slow-cooked to perfection. A dish so elaborate, it could have easily been lost to time — and yet, it has endured, evolved, and is still deeply loved to this day.

At DUM, our aim is to bring biryani to parts of the world where it is yet to be known — to bring its stories, tastes, and experiences to your home. What we Serve

The Dum menu is anchored by biryani — the heart of what we do. Around it, we’ve curated sides, drinks, and sweets chosen not just to accompany it, but to create the perfect pairing. Every element is there to balance and elevate the biryani, turning a single dish into a complete experience. 

What you see is a concise offering, intentionally kept so. Each dish has been tasted, considered, and selected because it belongs — food and drink that work together, presented with the same thought and care that defines Dum.

The Biryani Chef Experience

This isn’t just about eating biryani — it’s about making it. In the Biryani Chef Experience, we guide you through each step: layering rice, meat, and spices, sealing the pot, and finally lifting the lid together. Over a few hours, you’ll cook alongside us, taste as you go, and sit down to enjoy the meal you’ve helped create.

It’s hands-on, welcoming, and built to show you why biryani has been treasured for centuries. It is a time of private worship and spiritual discipline, but also of shared joy and abundant feasting. Families and communities come together at suhoor, the pre-dawn meal, and at iftar, the evening meal, to break their fasts with copious, delicious dishes.
